makes 2 15" thin crust pizzas bake at 400-450 degrees F 10-15 minutes crust ingredients: 2.25 - 2.5 cups all purpose flour 0.5 cup semolina flour 0.25 cup fine corn meal or corn flour 0.25 cup polenta (coarse corn meal) 1 tbsp sugar 2 tsp instant yeast 2 tsp salt 1 cup water 0.25 cup olive oil procedure: - prepare dough in bread machine using ingredients above - if possible, allow extra rising/resting time after normal dough cycle - preheat oven - sprinkle a small amount of polenta on aluminum pizza pans - divide dough, roll out crust, put it on the pans - brush crust with olive oil - if using sauce, spread on crust - spread about 8 oz grated mozzarella (or other cheese as desired) on the crust or on top of the sauce - put pizza in preheated oven for 1-2 minutes to melt cheese - add precooked toppings to pizza - sprinkle with coarse salt - spread a small amount of grated hard cheese (pecorino romano, parmesan, etc.) on top of the toppings - bake for 10-15 minutes, until edge of crust is brown and crispy
